No Bake Blueberry Oatmeal Bars

Can be eaten as a snack, breakfast option, or even as a dessert they are THAT tasty! This recipe comes together very easily and as a bonus does not require heating up the oven.

Ingredients

For the Oat base:

  • 1 cup Organic Ancient Super Grain
  • 1 cup oat flour - no need to buy oat flour separately you can make your own by blending 1 cup of Ancient Super Grain in your high speed blender
  • 1/3 cup maple syrup
  • 2 tbsp coconut oil
  • 1/3 cup nut butter 

Blueberry Filling:

  • 2 cups frozen blueberries - also delicious with cherries or mixed berries!
  • 1/4 cup water

Instructions

Blueberry Filling:

  1. Over medium heat, add the frozen blueberries and water a saucepan.
  2. Bring to boil then turn down heat to medium low and allow to simmer for about 7 minutes. Stir every few minutes allowing the mixture to  thicken up. 

Oat Bar base:

  1. Line a baking tin or container with parchment paper
  2. In a large mixing bowl combine all the remaining ingredients together. The mixture should hold together. If too dry, add more nut butter. If too wet, add more oat flour.
  3. Reserve about a half of the mixture for the top. 
  4. Pour the remaining mixture into a parchment lined container and use the back of a spoon to press it together.
  5. Pour the blueberry mixture, over and spread evenly.
  6. Crumble on the remaining oat mixture and press down to create the top of the bar. 
  7. Refrigerate for 3 hours or until set, ideally overnight if you can wait! 
  8. Store your bars in an airtight container in the refrigerator for 1 to 2 weeks. You can also freeze it in a sealed freezer bag for up to 3 months.
