Can be eaten as a snack, breakfast option, or even as a dessert they are THAT tasty! This recipe comes together very easily and as a bonus does not require heating up the oven.
Over medium heat, add the frozen blueberries and water a saucepan.
STEP 2
Bring to boil then turn down heat to medium low and allow to simmer for about 7 minutes. Stir every few minutes allowing the mixture to thicken up.Â

Oat Bar base:
Line a baking tin or container with parchment paper
STEP 4
In a large mixing bowl combine all the remaining ingredients together. The mixture should hold together. If too dry, add more nut butter. If too wet, add more oat flour.
STEP 5
Reserve about a half of the mixture for the top.Â
STEP 6
Pour the remaining mixture into a parchment lined container and use the back of a spoon to press it together.
STEP 7
Pour the blueberry mixture, over and spread evenly.
STEP 8
Crumble on the remaining oat mixture and press down to create the top of the bar.Â
STEP 9
Refrigerate for 3 hours or until set, ideally overnight if you can wait!Â
STEP 10
Store your bars in an airtight container in the refrigerator for 1 to 2 weeks. You can also freeze it in a sealed freezer bag for up to 3 months.
