No Bake Blueberry Oatmeal Bars
Can be eaten as a snack, breakfast option, or even as a dessert they are THAT tasty! This recipe comes together very easily and as a bonus does not require heating up the oven.
Ingredients
For the Oat base:
- 1 cup Organic Ancient Super Grain
- 1 cup oat flour - no need to buy oat flour separately you can make your own by blending 1 cup of Ancient Super Grain in your high speed blender
- 1/3 cup maple syrup
- 2 tbsp coconut oil
- 1/3 cup nut butterÂ
Blueberry Filling:
- 2 cups frozen blueberries - also delicious with cherries or mixed berries!
- 1/4 cup water
Instructions
Blueberry Filling:
- Over medium heat, add the frozen blueberries and water a saucepan.
- Bring to boil then turn down heat to medium low and allow to simmer for about 7 minutes. Stir every few minutes allowing the mixture to  thicken up.Â
Oat Bar base:
- Line a baking tin or container with parchment paper
- In a large mixing bowl combine all the remaining ingredients together. The mixture should hold together. If too dry, add more nut butter. If too wet, add more oat flour.
- Reserve about a half of the mixture for the top.Â
- Pour the remaining mixture into a parchment lined container and use the back of a spoon to press it together.
- Pour the blueberry mixture, over and spread evenly.
- Crumble on the remaining oat mixture and press down to create the top of the bar.Â
- Refrigerate for 3 hours or until set, ideally overnight if you can wait!Â
- Store your bars in an airtight container in the refrigerator for 1 to 2 weeks. You can also freeze it in a sealed freezer bag for up to 3 months.
