Healthy Ancient Grain Granola

You never need to buy granola from the grocery store again with this healthy granola recipe. It is so simple to make and easy to change up ingredients based on what you have. Using the Ultimate Organic super seed blend as your base boosts this granola’s nutritional profile as it already includes flax seeds, pumpkin seeds, oats, and cracked red winter wheat - plus less measuring for you!

Ingredients

  • 4 cups of Ultimate Organic Super Seed blend
  • 1 ½ cup raw nuts and/or seeds (I like using 1/2 cup each of pecans, brazil nuts, and cashews)
  • 1 teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ½ cup melted coconut oil
  • ½ cup maple syrup (can also use honey)
  • 1 teaspoon vanilla extract
  • ⅔ cup dried fruit, chopped if large (I typically use raisins but pitted dates or cranberries are delicious too! )

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the Ultimate Organic Super Seed blend, nuts and/or seeds, dried fruit, salt and cinnamon, and mix.
  3. Pour in the oil, if using coconut oil first melt the oil over a double broiler, maple syrup and/or honey and vanilla. Mix well, until everything is lightly coated.
  4. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer and press it flat (this helps to create larger clumpy pieces)
  5. Bake until lightly golden, about 21 to 24 minutes, turn your pan around halfway to ensure even cooking, and press the granola down again with a spoon if you like larger clumpy pieces.
  6. Let the granola cool completely and break up into pieces.
  7. Store the granola in an airtight container at room temperature for 1 to 2 weeks. You can also freeze it in a sealed freezer bag for up to 3 months. The dried fruit will freeze solid, so let it warm to room temperature for 5 to 10 minutes before enjoying.
